  • ½ cup low-sodium soy sauce or coconut aminos
  • 3–4 cloves garlic, minced
  • ½ teaspoon smoked paprika (optional for a little kick)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch or arrowroot (for thickening)
  • Optional: chopped green onions or sesame seeds for garnish

Instructions:

  1. In a small bowl, mix sugar, soy sauce, garlic, apple cider vinegar, and paprika.
  2. Place chicken in the slow cooker and pour sauce over it.
  3. Cook on LOW for 5–6 hours or HIGH for 3 hours.
  4. Remove chicken and thicken sauce with cornstarch mixed in 2 tablespoons water. Stir back in and cook on HIGH for 15 minutes.
  5. Shred or slice chicken and drizzle with thickened sauce.
  6. Serve over jasmine rice or roasted sweet potatoes. Garnish with sesame seeds or chopped scallions.

Tips & Ideas:

  • Add sliced bell peppers or green beans in the last hour for a built-in veggie boost.
  • Pairs beautifully with cornbread muffins or garlicky sautéed kale.

⚠ Caution: Coconut aminos are a great low-sodium alternative but still contain natural sugars – keep portions balanced!
