Sweet Potato & Apple BBQ Chicken (Southern Harvest Bowl Style)
Ingredients:
- 4 boneless, skinless chicken breasts or thighs
- 2 small sweet potatoes, peeled and cubed
- 1 large apple, diced (Honeycrisp or Fuji)
- ¾ cup clean BBQ sauce (store-bought or homemade)
- 1 teaspoon smoked paprika
- ½ teaspoon cinnamon
- Salt to taste
- Optional: chopped pecans for topping
Instructions:
- Place sweet potatoes and apple in the bottom of the slow cooker.
- Lay chicken on top.
- Pour BBQ sauce over everything.
- Sprinkle with paprika, cinnamon, and a pinch of salt.
- Cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is tender and sweet potatoes are soft.
- Shred chicken and stir gently to combine, then top with chopped pecans if using.

- Turn it into a bowl! Add greens and a drizzle of ranch or tahini dressing.
- Want a sweeter flavor? Add a spoon of maple syrup into the BBQ mix.
