BBQ Baked Potato Chicken Slow Cooker Recipe (Backyard Flavor in a Bowl)


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup clean-ingredient BBQ sauce (homemade or bottled)
  • 1 small onion, thinly sliced
  • ½ teaspoon smoked paprika
  • Salt & pepper to taste
  • Optional: baked potatoes, sweet potatoes, or rice to serve
  • Toppings: chopped green onions, avocado, shredded cheese, or dairy-free alternatives

Instructions:

  1. Place chicken and onions in the slow cooker.
  2. Pour BBQ sauce over and sprinkle with smoked paprika, salt, and pepper.
  3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Shred chicken, stir into sauce, and let it soak for another 10 minutes.
  5. Serve piled high on baked potatoes or over rice with your fave toppings.
