Maple Dijon Chicken with Carrots & Potatoes (Savory-Sweet Cozy Bowl)


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 4 cloves garlic, minced
  • 1 pound baby carrots
  • 1 pound baby potatoes, halved
  • ½ teaspoon thyme
  • Salt & pepper to taste

Instructions:

  1. In a small bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, and garlic.
  2. Place chicken in the bottom of the slow cooker.
  3. Add carrots and potatoes around the chicken.
  4. Pour the maple Dijon mixture over everything and sprinkle with thyme, salt, and pepper.
  5. Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours, until chicken is fork-tender and veggies are soft.
  6. Spoon sauce over everything before serving!
