Balsamic Glazed Chicken Thighs Sheet Pan Recipe 🍗
Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 lb sweet potatoes, cubed
- 1 lb Brussels sprouts, halved
- 1 red onion, sliced
- 2 cups cooked Basmati rice
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a bowl, mix balsamic vinegar, olive oil, brown sugar, minced garlic, salt, and pepper.
3. Place chicken thighs on a greased sheet pan and brush them with the balsamic glaze.
4. Arrange sweet potatoes, Brussels sprouts, and red onion slices around the chicken on the sheet pan.
5. Drizzle the veggies with a little olive oil, and season with salt and pepper.
6. Bake for 35-40 minutes until the chicken thighs are cooked through and the veggies are roasted.
7. Serve with cooked Basmati rice on the side.

2. Cut vegetables to a similar size for uniform roasting.
