Slow Cooker Tuscan Chicken with White Beans Recipe | Rustic Italian-Inspired Dinner

Tuscan White Bean Chicken with Spinach & Tomatoes Recipe (Rustic Slow Cooker Soul Food)


Ingredients:

  • 4 boneless, skinless chicken thighs or breasts
  • 1 (15 oz) can white beans (cannellini or great northern), drained & rinsed
  • 1 (15 oz) can diced tomatoes (with basil or plain)
  • 1½ cups low-sodium chicken broth
  • 2 cups baby spinach
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt & black pepper to taste
  • Optional: parmesan or dairy-free cheese for topping

Instructions:

  1. Add chicken, beans, tomatoes, broth, onion, garlic, and seasoning to the slow cooker.
  2. Cook on LOW for 6–7 hours or HIGH for 4 hours.
  3. Stir in spinach during the last 20 minutes.
  4. Shred the chicken slightly or leave whole. Stir well and ladle into bowls.
  5. Garnish with grated cheese if desired, and serve with crusty bread or over rice.

Tips & Ideas:

  • Add a splash of lemon juice or balsamic vinegar at the end for brightness.
  • Want it creamier? Stir in a spoonful of cashew cream or coconut milk.
  • Pairs beautifully with rosemary focaccia or garlic toast.

⚠ Caution: Beans may cause bloating for some. Soaking beforehand (if using dried) helps.
