Cilantro Lime Ranch Chicken Recipe (Zesty Tex-Mex Magic)
Ingredients:
- 4 boneless chicken thighs or breasts
- 1 packet clean ranch seasoning mix (or homemade!)
- 1 (15 oz) can black beans, rinsed
- 1 small bunch cilantro, chopped
- Juice of 2 limes
- Zest of 1 lime
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- Optional: avocado slices, sour cream or cashew cream, shredded lettuce
Instructions:
- Place chicken, black beans, lime juice, zest, and seasoning into the slow cooker.
- Sprinkle in cumin and garlic powder. Mix to coat.
- Cook on LOW for 6–7 hours or HIGH for 3½ hours.
- Shred chicken and stir in chopped cilantro just before serving.
- Serve in bowls over rice, in taco shells, or as burrito filling!
