Lemon Garlic Herb Chicken with Green Beans & Potatoes Slow Cooker Recipe (Zesty Clean One-Pot Meal)


Ingredients:

  • 4 bone-in or boneless chicken thighs
  • 1 pound baby potatoes, halved
  • 1 cup green beans, trimmed
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt & pepper to taste

Instructions:

  1. Place chicken in the slow cooker and season with thyme, salt, pepper, and lemon zest.
  2. Add potatoes and minced garlic around the chicken.
  3. Drizzle olive oil and lemon juice over everything.
  4. Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours.
  5. Add green beans during the last 30–40 minutes to keep them crisp-tender.
  6. Serve with extra lemon wedges if desired.
