Slow Cooker Chicken Enchilada Recipe 🍗
Ingredients:
- 2 lbs chicken breasts
- 1 can (10 oz) enchilada sauce
- 1 can (15 oz) black beans, drained
- 1 cup corn kernels
- 1 onion, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup chopped cilantro for garnish
Instructions:
1. Place chicken breasts in the slow cooker.
2. Pour enchilada sauce over the chicken and add black beans, corn, and onion.
3. Cook on low for 6-7 hours or high for 3-4 hours.
4. Shred the chicken and stir in cheese before serving.
