Honey Soy Chicken Thighs Sheet Pan Recipe 🍯🍗
Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tbsp olive oil
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 lb baby potatoes, halved
- 1 lb green beans, trimmed
- 1 red bell pepper, sliced
- 2 cups cooked Jasmine rice
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a bowl, mix soy sauce, honey, olive oil, rice vinegar, minced garlic, salt, and pepper.
3. Place chicken thighs on a greased sheet pan and brush them with the honey soy mixture.
4. Arrange baby potatoes, green beans, and red bell pepper slices around the chicken on the sheet pan.
5. Drizzle the veggies with a little olive oil, and season with salt and pepper.
6. Bake for 35-40 minutes until the chicken thighs are cooked through and the veggies are tender.
7. Serve with cooked Jasmine rice on the side.
Tips:
1. Always preheat the oven for even cooking.
2. Cut vegetables to a similar size for uniform roasting.
3. Line your sheet pan with parchment paper for easy clean-up.
4. Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (74°C).
