➡ Ingredients:

1/2 cup cooked quinoa

1/2 cup cherry tomatoes, halved

1/4 cup cucumber, sliced

1/4 cup Kalamata olives, pitted and halved

1/4 cup red onion, thinly sliced

1/4 cup hummus

1 tbsp olive oil

1 tbsp lemon juice

Salt and pepper to taste

Fresh parsley for garnish


➡ Instructions:

1. In a bowl, layer cooked quinoa, cherry tomatoes, cucumber, olives, and red onion.


2. Top with a generous dollop of hummus.
