Vegetarian Taco Bowl Recipe 🌮🍚
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tbsp taco seasoning
- 2 cups cooked brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup diced bell peppers
- 1/2 cup diced red onion
- 1 cup salsa
- 1 cup shredded lettuce
- 1/2 cup diced avocado
- Lime wedges for garnish
Instructions:
1. Preheat the oven to 400°F. Toss chickpeas with olive oil and taco seasoning. Spread on a baking sheet and roast for 20-25 minutes, until crispy.
2. In bowls, layer brown rice, black beans, corn, bell peppers, and red onion.
3. Top with roasted chickpeas, salsa, lettuce, and avocado.
4. Garnish with lime wedges.
