Spring Vegetable Minestrone One Pot Recipe
Ingredients:
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into pieces
- 1 can (15 oz) diced tomatoes
- 6 cups vegetable broth
- 1 cup small pasta (like ditalini or elbows)
- 1 tsp dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
1. In a large pot, sauté onion, carrots, celery, and garlic until softened.
2. Add diced zucchini, green beans, diced tomatoes (with juices), and vegetable broth. Bring to a boil.
3. Stir in small pasta and dried basil. Reduce heat and simmer for 10-12 minutes, or until pasta is tender.
4. Season with salt and pepper to taste. Serve hot with grated Parmesan cheese on top.
