Sweet Southern Garlic Soy Chicken Thighs Recipe (Slow Cooker Style)


Ingredients:

  • 6 boneless, skinless chicken thighs
  • ⅓ cup coconut sugar (or brown sugar)
  • ½ cup low-sodium soy sauce (or coconut aminos)
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon black pepper
  • Optional garnish: sliced green onions, sesame seeds

Instructions:

  1. Add the chicken thighs to your slow cooker.
  2. In a small bowl, whisk together the coconut sugar, soy sauce, garlic, apple cider vinegar, and pepper.
  3. Pour the mixture over the chicken.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours, until the chicken is tender and flavorful.
  5. Remove the chicken, shred if desired, and spoon extra sauce over the top.
  6. Garnish with green onions and sesame seeds for a finishing touch.

Tips & Ideas:

  • This dish pairs beautifully with jasmine rice, quinoa, or cauliflower rice.
  • Want it thicker? Mix 1 tbsp arrowroot or cornstarch with 2 tbsp cold water and stir it into the sauce during the last 30 minutes.
  • Add sliced bell peppers or snap peas for a veggie boost!
