Sweet Southern Garlic Soy Chicken Thighs Recipe (Slow Cooker Style)
Ingredients:
- 6 boneless, skinless chicken thighs
- ⅓ cup coconut sugar (or brown sugar)
- ½ cup low-sodium soy sauce (or coconut aminos)
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- ½ teaspoon black pepper
- Optional garnish: sliced green onions, sesame seeds
Instructions:
- Add the chicken thighs to your slow cooker.
- In a small bowl, whisk together the coconut sugar, soy sauce, garlic, apple cider vinegar, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours, until the chicken is tender and flavorful.
- Remove the chicken, shred if desired, and spoon extra sauce over the top.
- Garnish with green onions and sesame seeds for a finishing touch.

- This dish pairs beautifully with jasmine rice, quinoa, or cauliflower rice.
- Want it thicker? Mix 1 tbsp arrowroot or cornstarch with 2 tbsp cold water and stir it into the sauce during the last 30 minutes.
