Apple Cider Pulled Chicken with Onions & Herbs Slow Cooker Recipe (Sweet Autumn Comfort)


Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • 1½ cups apple cider (not apple juice!)
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried rosemary
  • ½ teaspoon thyme
  • Salt & pepper to taste
  • Optional: dash of cinnamon or nutmeg for extra warmth

Instructions:

  1. Place sliced onion and garlic at the bottom of your slow cooker.
  2. Add chicken, then pour over apple cider, Dijon, and apple cider vinegar.
  3. Sprinkle with herbs, salt, and pepper. Add a pinch of cinnamon if you’re feeling fancy.
  4. Cook on LOW for 6–7 hours or HIGH for 3½–4 hours.
  5. Shred the chicken and stir back into the juices. Let it soak up the goodness!
  6. Serve on buns, baked sweet potatoes, or autumn harvest bowls.
