Tuscan White Bean Chicken with Spinach & Tomatoes Recipe (Rustic Slow Cooker Soul Food)
Ingredients:
- 4 boneless, skinless chicken thighs or breasts
- 1 (15 oz) can white beans (cannellini or great northern), drained & rinsed
- 1 (15 oz) can diced tomatoes (with basil or plain)
- 1½ cups low-sodium chicken broth
- 2 cups baby spinach
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt & black pepper to taste
- Optional: parmesan or dairy-free cheese for topping
Instructions:
- Add chicken, beans, tomatoes, broth, onion, garlic, and seasoning to the slow cooker.
- Cook on LOW for 6–7 hours or HIGH for 4 hours.
- Stir in spinach during the last 20 minutes.
- Shred the chicken slightly or leave whole. Stir well and ladle into bowls.
- Garnish with grated cheese if desired, and serve with crusty bread or over rice.

- Add a splash of lemon juice or balsamic vinegar at the end for brightness.
