Mediterranean Chicken with Artichokes & Olives Slow Cooker Recipe (Sun-Kissed Slow Cooker)


Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1 (14 oz) can artichoke hearts, drained and quartered
  • ½ cup kalamata olives, pitted and halved
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon thyme
  • Salt & black pepper to taste
  • Juice of 1 lemon

Instructions:

  1. Add chicken thighs to the bottom of your slow cooker.
  2. Layer artichokes, olives, tomatoes, and red onion over the top.
  3. Drizzle with olive oil and lemon juice, then sprinkle with oregano, thyme, salt, and pepper.
  4. Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours.
  5. Serve with rice, couscous, or a slice of sourdough for soaking up the juices.

Tips & Ideas:

  • Crumble in feta or dairy-free cheese for extra zing!
  • Add a handful of chopped spinach in the last 20 minutes.
  • This one makes a great meal prep bowl with quinoa and cucumbers.

⚠ Caution: Olives can be salty – go light on added salt until the end after a taste test.
