Mediterranean Chicken with Artichokes & Olives Slow Cooker Recipe (Sun-Kissed Slow Cooker)
Ingredients:
- 4 boneless, skinless chicken thighs
- 1 (14 oz) can artichoke hearts, drained and quartered
- ½ cup kalamata olives, pitted and halved
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- ½ teaspoon thyme
- Salt & black pepper to taste
- Juice of 1 lemon
Instructions:
- Add chicken thighs to the bottom of your slow cooker.
- Layer artichokes, olives, tomatoes, and red onion over the top.
- Drizzle with olive oil and lemon juice, then sprinkle with oregano, thyme, salt, and pepper.
- Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours.
- Serve with rice, couscous, or a slice of sourdough for soaking up the juices.
Tips & Ideas:
- Crumble in feta or dairy-free cheese for extra zing!
- Add a handful of chopped spinach in the last 20 minutes.
- This one makes a great meal prep bowl with quinoa and cucumbers.
