Creamy Cilantro Lime Ranch Chicken Recipe| Easy Slow Cooker Tex-Mex Dinner

Cilantro Lime Ranch Chicken with Black Beans (Slow Cooker Recipe)


Ingredients:

  • 4 boneless, skinless chicken thighs (or breasts if preferred)
  • 1 packet ranch seasoning mix (or 3 tbsp homemade ranch mix)
  • ½ cup chopped fresh cilantro
  • Juice of 2 limes
  • 1 (15 oz) can black beans, drained and rinsed
  • ½ cup sour cream or plain Greek yogurt (optional for added creaminess)
  • Salt and pepper to taste

Instructions:

  1. Place chicken in the bottom of your slow cooker.
  2. Sprinkle with ranch seasoning.
  3. Add the black beans, lime juice, and chopped cilantro over the top.
  4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  5. Before serving, stir in sour cream or Greek yogurt for a creamy twist.
  6. Serve over rice, in tacos, or wrapped in lettuce cups.

  • Want more veggies? Add diced bell peppers or a handful of frozen corn.
  • Make it a bowl! Layer with rice, avocado slices, shredded lettuce, and a lime wedge.
