Cilantro Lime Ranch Chicken with Black Beans (Slow Cooker Recipe)
Ingredients:
- 4 boneless, skinless chicken thighs (or breasts if preferred)
- 1 packet ranch seasoning mix (or 3 tbsp homemade ranch mix)
- ½ cup chopped fresh cilantro
- Juice of 2 limes
- 1 (15 oz) can black beans, drained and rinsed
- ½ cup sour cream or plain Greek yogurt (optional for added creaminess)
- Salt and pepper to taste
Instructions:
- Place chicken in the bottom of your slow cooker.
- Sprinkle with ranch seasoning.
- Add the black beans, lime juice, and chopped cilantro over the top.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
- Before serving, stir in sour cream or Greek yogurt for a creamy twist.
- Serve over rice, in tacos, or wrapped in lettuce cups.
