Tuscan White Bean Chicken (Rustic Comfort in a Bowl)
Ingredients:
- 4 boneless chicken breasts or thighs
- 1 (15 oz) can cannellini beans, drained and rinsed
- 1 (15 oz) can diced tomatoes with Italian herbs
- 3 cloves garlic, minced
- 1 small yellow onion, diced
- 1 cup chicken broth (low sodium)
- 2 cups chopped spinach or kale
- 1 teaspoon dried oregano
- ½ teaspoon rosemary
- Salt & pepper to taste
- Optional: drizzle of olive oil before serving
Instructions:
- Add chicken to the slow cooker.
- Top with beans, tomatoes, garlic, onion, oregano, rosemary, salt, and pepper.
- Pour broth over everything.
- Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours.
- Shred the chicken and stir in spinach or kale until wilted (about 10 minutes before serving).
- Drizzle with olive oil for richness and serve with crusty bread or rice.
Tips & Ideas:
- Add zucchini or mushrooms for extra veggie depth.
- Try parmesan or dairy-free cheese sprinkled on top if desired.
- Makes an amazing rustic soup bowl when thinned with extra broth!
