Slow Cooker Tuscan White Bean Chicken Recipe | Cozy Mediterranean-Style Dinner Recipe

Tuscan White Bean Chicken (Rustic Comfort in a Bowl)


Ingredients:

  • 4 boneless chicken breasts or thighs
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes with Italian herbs
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 cup chicken broth (low sodium)
  • 2 cups chopped spinach or kale
  • 1 teaspoon dried oregano
  • ½ teaspoon rosemary
  • Salt & pepper to taste
  • Optional: drizzle of olive oil before serving

Instructions:

  1. Add chicken to the slow cooker.
  2. Top with beans, tomatoes, garlic, onion, oregano, rosemary, salt, and pepper.
  3. Pour broth over everything.
  4. Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours.
  5. Shred the chicken and stir in spinach or kale until wilted (about 10 minutes before serving).
  6. Drizzle with olive oil for richness and serve with crusty bread or rice.

Tips & Ideas:

  • Add zucchini or mushrooms for extra veggie depth.
  • Try parmesan or dairy-free cheese sprinkled on top if desired.
  • Makes an amazing rustic soup bowl when thinned with extra broth!
