Honey Balsamic Glazed Chicken (Slow Cooker Chicken Dinner Recipe)


Ingredients:

  • 6 boneless, skinless chicken thighs
  • ½ cup balsamic vinegar
  • ¼ cup honey (raw if possible)
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 1 tablespoon coconut aminos or soy sauce
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Optional garnish: chopped parsley

Instructions:

  1. Place chicken thighs into the slow cooker.
  2. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, garlic, soy sauce, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Cook on LOW for 6 hours or HIGH for 3 hours.
  5. Once done, spoon sauce over chicken to glaze. You can broil the thighs for 2–3 minutes for extra caramelization if desired.
  6. Garnish with fresh parsley and serve hot.

  • Serve with roasted sweet potatoes or over quinoa for a grounding, nourishing meal.
  • Add carrots and onion in the slow cooker for a built-in veggie boost.
