Maple Dijon Chicken with Carrots & Potatoes (Savory-Sweet Cozy Bowl)
Ingredients:
- 4 boneless, skinless chicken breasts
- 3 tablespoons Dijon mustard
- 2 tablespoons pure maple syrup
- 1 tablespoon apple cider vinegar
- 4 cloves garlic, minced
- 1 pound baby carrots
- 1 pound baby potatoes, halved
- ½ teaspoon thyme
- Salt & pepper to taste
Instructions:
- In a small bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, and garlic.
- Place chicken in the bottom of the slow cooker.
- Add carrots and potatoes around the chicken.
- Pour the maple Dijon mixture over everything and sprinkle with thyme, salt, and pepper.
- Cook on LOW for 6–7 hours or HIGH for 3.5–4 hours, until chicken is fork-tender and veggies are soft.
- Spoon sauce over everything before serving!
